Peach Cookies Recipe

Don’t these cookies look to delicious to eat? Not only are they so cute, but they taste amazing! I used Florida Crystals organic raw cane sugar in these as well. If you have never tried this type of sugar, it’s a must. The cookies almost taste like a shortbread cookie and you have the option of spreading jelly or nutella in the middle and boy does that take these to another level.

I think these cookies would be great for baby or wedding showers or any special occasion or in my case, a snow day at the house.

These cookies are just regular sugar cookies, but below are the directions then head down a little bit farther for a few tips on making these.

Ingredients
  • Cookies:
  • 1½ cups all-purpose flour
  • 1¾ tsp baking powder
  • ¼ tsp salt
  • 10½ Tbsp butter, softened
  • ⅓ cup granulated Florida Crystals sugar
  • ¼ cup packed light-brown sugar
  • 1 egg
  • 2 Tbsp sour cream
  • 1 tsp vanilla extract
  • Filling:
  • Strawberry jelly or peach jelly
  • nutella
  • Topping for cookies:
  • 6 Tbsp milk
  • red and yellow food coloring
  • Florida Crystals ½ cup granulated sugar
  • fresh mint leaves, for garnish (optional)
Instructions
  1. First preheat your oven to 375 degrees.
  2. In a mixing bowl, whisk together flour, baking powder and salt, set aside. In an electric mixer, cream together butter, granulated sugar and light-brown sugar on medium-low speed until well blended with a paddle attachment.
  3. Mix in egg and vanilla. Add sour cream and mix until blended.
  4. With mixer on low speed, slowly add in dry ingredients.
  5. Roll dough into balls and place on a cookie sheet.
  6. Cook for about 15 minutes or until slightly brown.
  7. Let the cookies completely cool.
  8. Pour 3 Tb of milk into 2 small bowls and tint one with red food coloring and one with yellow. You can the red to look more like a vibrant pink so be careful how much you add.
  9. Get a basting brush or unused paintbrush and dip it in the red and yellow colored milk and paint on top of cookies. Try to use as less milk as possible because you do not want soggy cookies.
  10. When you have painted your cookies, dip the tops you painted in sugar.
  11. Spread jelly or nutella on one side of the painted cookies and put together with another cookie.
  12. Place a small mint leave in between cookies for a garnish.

This was my cookie decorating station. I made the cookies, then let them cool. Divide the milk up like explained in the recipe above then tint your milk yellow and pink. Don’t add to much red or it will be red and not pink. Paint some yellow and pink on each cookie then dip in Florida Crystals raw cane sugar. You want to use the granulated type and not the powdered one.

Try to use as less of the tinted milk as you can or you will have soggy cookies.

Now for the fun part! Half of the cookies we filled with strawberry jelly (or you can use peach but I didn’t have any on hand) and half we filled with nutella. Both were yummy and we couldn’t decide which was better. Once you have painted and sugared the cookies, spread either jelly or nutella on one inside of a cookie and smash together with another. Put a mint leaf in for show and you are done!

I didn’t eat the mint leaves in mine, I just used them for decorating.
